What’s For Dinner Tonight? FISH!
Yes, fish! I know, I know, some people just really simply don’t like seafood. I used to be one of those people. The closest I’d get to eating seafood was eating a can of tuna fish with tons of mayo in it, some pickle relish and a bit of dry mustard, maybe throwing in a few diced onions for some extra flavor, but now I’m pretty experimental with the types of seafood I’ll try, and it’s really paid off because I’ve found some truly wonderful fish that is not only mild in taste, but low in fat and high in protein and those all important omega 3 fatty acids.
If you buy the right kind of fish, and you cook it right, which means not overcooking it too much but making it just right so that it flakes apart tenderly, you may just get hooked. The newest fish we tried that we absolutely adore now is one called Pangasias. We had never heard of it, but as we were shopping at a local Sam’s Club on a saturday when they have all the sample goodies out, we stopped at a booth to try a fish a woman had cooked and put in sample cups.
I saw that she cooked the fish, Pangasias, in a small plugged in pan, with a lid on it. She informed us that she just used butter (of course you could use a lighter kind to save on calories, but it is delicious in real butter, you don’t need a lot, just enough to flavor it and sautee it) and a citrust seasoning on the fish, and boy let me tell you, that fish just melted right in your mouth!
There are numerous other types of fish that are low in fat and virtually pure protein as well that can be cooked simlilarly, or also they can be cooked on a grill in the summer, wrapped in foil with some olive oil and lemon juice. Those are salmon, grouper, mahi mahi, and orange roughy among others.
The way I cooked my Pangasias fish the last time (by the way, pangasias is an extraordinarily mild white fish) was I put it in a frying pan with butter, about a tablespoon of lemon juice, garlic powder, dill weed and some seasoned salt for some extra flavor. It was enough to make us both fall in love at first bite, plus it really wasn’t fattening at all.
